Watercress Cream Soup


  • 2 tbsp butter

  • 100g big onion (wedged)

  • 50g potatoes (peeled, sliced)

  • 600ml water/ chicken broth

  • 50g watercress (sectioned)

  • 100ml cooking cream


  • Salt to taste

  • Sugar to taste


  • Watercress leaves

  • Cooking cream

  • Crushed black pepper


  1. Heat up butter and olive oil in the sauce pot, stir-fry onions and potatoes until aromatic. Add water or chicken broth bring to boil, reduce to low heat, simmer for 20-25 minutes. Add in watercress, continue cook for further 3-5 minutes.

  2. Transfer soup and ingredients to the fruit blender, pound until smooth. Re-boil it in a pot with cooking cream, season with a pinch of sugar, salt and chicken granule.
    Serve hot the watercress soup with some watercress leaves, cooking cream and crushed black pepper.
