Avocado Soup


  • 2 large ripe avocados

  • 50ml sour cream

  • 1 litter well-flavored home-made chicken stock

  • 1 1/2 cup milk

  • a small bunch of fresh coriander (cilantro), chopped

  • salt and ground black pepper


  1. Peel the avocado and cut it in half. Remove the pits and chop the flesh coarsely. Place it in a food processor with sour cream. Process until smooth.

  2. Heat the chicken stock in a sauce pan. Add in milk when the chicken stock is hot (just below the simmering point). Stir gently to mix.

  3. Slowly pour the avocado mixture into the hot stock. Keep stirring.

  4. Heat gently but do not let the mixture approach boiling point. Add salt to taste.

  5. Ladle the avocado soup into pre-heated bowls. Sprinkle each serving with chopped coriander black pepper. Serve immediately, as it will discolor on standing.

Just before serving, add a generous squeeze of lime or lemon juice for added zest.
