Stir-fry Cod Fish with Mixed Veggies

Ingredients:

  • 16oz/ 680g cod fish fillet, skinned and cut into thin strips

  • 2 garlic cloves, finely chopped

  • 2.5cm/ 1 inch piece root ginger, peel and cut into thin slices

  • 4 spring onions, cut white part of the spring onions diagonally into 3/4 inch (2cm) slices, cut the green part of spring onions length-way into strips

  • 11oz/ 300g beansprout

  • 8-10 baby corns cobs, cut halfway into 4 equal slices

  • 1/2 Carrots, cut diagonally into thin slices

  • 4oz/ 115g asparagus spears, trim and cut halfway

  • 4oz/ 115g small snow peas/ mangetouts

  • 3 tbsp groundnut oils

  • 1-2 tbsp light soy sauce

  • Pinch of five-spice powder

  • Salt and ground black pepper

Method:

  1. Season the cod fish with five-spice powder, salt and black pepper.

  2. Heat a wok, add in oil. As soon as the oil is hot. Add in chopped garlic, sauté for 10 seconds and add in ginger slices. Stir-fry for 1 minute, add in white part of the spring onions. Stir and cook for 1 minute.

  3. Add in cod fish strips, stir-fry until the cod are opaque, about 2-3 minutes.

  4. Add in beansprout, stir. Follow by corns, carrots, asparagus and mangetouts. Stir-fry for another 3-4 minutes.

  5. Add in soy sauce and stir to mix evenly. Before remove from heat, stir in green part of the spring onions and serve immediately.
