Zingy Papaya Fruit Salad

  • 2 large ripe papayas

  • 2 pieces preserved stem ginger (finely sliced)

  • juice of 1 fresh lime

  1. Cut the papaya in half lengthwise. Scoop out the seeds with spoon. Cut the flesh into neat, thin slices with a sharp knife.

  2. Arrange the sliced papaya on a plate. Squeeze the lime juice over the papaya and sprinkle with the sliced stem ginger. Serve immediately.

This fruit salad is also suitable and delicious for other topical fruits. Try to use passion fruit pulp to replace stem ginger, or substitute two ripe, peeled and stoned (pitted) mangoes for the papaya.
