Healthy Recipes - White Beans with Tomatoes Salad

Ingredients:

  • 1 can, 400g/ 14oz cannelloni beans, drained

  • 700g tomatoes, diced

  • ½ - 1 mild fresh chilli pepper, chopped

  • 1 fresh green bell pepper, seeded and diced

  • 1 big onion, diced

  • 3-4 garlic cloves, diced

  • Juice of 1 lemon

  • Grated rind of lemon

  • 45-60ml/ 3-4 tbsp olive oil

  • 15ml/ 1 tbsp of honey

  • 15ml/ 1 tbsp wine vinegar or cider vinegar

  • Pinch of sugar

  • Salt and ground black pepper

  • Chopped parsley, to garnish

Preparation:

  1. Finely chop all the ingredients.

  2. Mix the chopped ingredients with cannelloni beans in a big salad bowl.

  3. Add in pinch of sugar, salt and ground black pepper.

  4. Toss until finely mix.

  5. Add the grated lemon rind, olive oil, vinegar, honey and lemon juice to the salad.

  6. Slightly mix to combine.

  7. Spoon the salad over to a serving plate, garnish with some chopped parsley. Ready to serve.
