Thai Sesame Chicken Patties

Ingredients:

  • 500g minced chicken

  • 4 spring onions

  • 15g fresh coriander, plus extra to garnish

  • 3 tablespoons toasted sesame seeds

  • 1tablespoon light soy sauce

  • 3.5cm piece root ginger, finely grated

  • 1 egg white

  • 1 tablespoon sesame oil

  • 1 tablespoon sunflower oil

  • Thai sweet chili dipping sauce, to serve

  • spring onion curls, to garnish

Method:

  1. Chop the spring onions and coriander finely with knife or a food processor then mix with the chicken mince, sesame seeds, soy sauce, ginger and egg white.

  2. Divide the mixture into 20 mounds on a chopping board. Shape each of the mixture into slightly flattened rounds with wetted hands, then chill in fridge for 1 hour.  

  3. Heat the sesame and sunflower oils in a frying pan, then put in the patties and fry for 10 minutes, turning once or twice until golden and cooked through to the centre.

  4. arrange on a serving plate and garnish with extra coriander leaves and spring onions curls.

  5. Ready to serve with the Thai sweet chili dipping sauce.
