Toss the chicken fillets with the juice of 1/2 lemon
and 1 tsp olive oil then fry for 3 minutes, turn
from browned and cooked through.
Toast 8 slices wholemeat bread then spread with 4
tbsp garlic mayonnaise.
Divide the the chicken between 4 slices of toast
then top with the shredded leaves of 2 gem lettuces
and a 5cm piece cucumber, thinly sliced.
Cover with the remaining slices of toast then press
together and cut into triangle.
