Panfried Duck With Orange Sauce And Avocado Orange Salsa


  • 1 piece (about 300g) duck breast with skin (boneless)

  • Some orange sauce


  • 1 tsp lime juice

  • 1/2 tsp paprika powder

  • 2 tbsp Brandy

  • 1/4 tsp salt

  • 1/4 tsp sage (dried)

Avocado and Orange Salsa:

  • 50g avocado (cubes)

  • 50g oranges (segment)

  • 50g big onion (chopped)

  • 10g Chinese parsley/ coriander (chopped)

  • 10g red chilies (finely diced)

  • 1 tsp lime juice


  • Mint leaves

  • Shredded orange juice


  1. Rinse the duck and pat-dry. Season with the marinade ingredients for 1 hour.

  2. Heat up 2 tbsp butter in the preheated sauce pan, shallow-fry the marinated duck piece until golden brown on both sides about 10% cook. Dish up and set aside.

To Assemble:

  1. Place some avocado and orange salsa onto the serving platter.

  2. Place on cooked duck breast, then dressing with some orange sauce and garnish with orange peel and mint leaves, serve at once.
