Chicken With Sweet Potato Wedges


  • 4 nos. sweet potatoes (about 1200g) (scrubbed)

  • 4 nos. chicken thighs with bone and skin (cut into wedges)

  • 1 no red onion (cut into wedges)

  • 4 nos. plum tomatoes (chunks)

  • 150g chorizo in one piece (skinned, sliced or diced depend on diameter)

  • 3 stems rosemary (leaves torn from stem )

  • 3 tbsp olive oil

  • sugar

  • salt


  1. Cut the potatoes into thick wedges.

  2. Put them into a large roasting tin together with the chicken, red onion and tomatoes.

  3. Tuck the chorizo in and around the potatoes.

  4. Sprinkle with the rosemary and some salt and pepper.

  5. Drizzle with oil. Roast in preheated oven at 200°C (400°C), gas mark 6, for 35 minutes.

  6. Turning once or twice until the chicken turn to golden. Cook through until the potatoes wedged is browned and tender.

  7. Spoon over to serving plate.
