Apricot Muesli Smoothies

Ingredients:

  • 50g (about 1/4 cup) ready-to-eat dried apricots

  • 40g (about 1/2 cup) natural muesli

  • 1 piece preserved stem ginger

  • 2 tbsp syrup from the ginger jar

  • 200ml (about 1 cup) semi-skimmed low-fat milk

Method:

  1. Chop the dried apricots with a sharp knife into slices or chunks.

  2. Chop the stem ginger.

  3. Put apricots and ginger in a blender. Add some syrup from the ginger jar.

  4. Add in muesli and milk.

  5. Whizz until smooth, add more milk if necessary to make a creamy drink. Serve immediately in a wide glasses.

Stem Ginger, some people also called it as preserved ginger. It is made by fresh young ginger, peeled and crystallized or preserved in the sugar syrup. Usually the syrup is sweet and it provides excellent contrast to the spice of the ginger.
