Vegetarian Chopped Liver

Ingredients:

  • 180g - 200g/ 6-7oz peas

  • 120-150g/ 4-5oz green beans

  • 3 eggs

  • 15 walnuts

  • 3 onions, chopped

  • 90ml/ 6 tbsp vegetable oil

  • Salt and ground black pepper

  • Slices of rye bread or crisp matzos, to serve

Preparation:

  1. Roughly chop the green beans and onions.

  2. Shell each walnut into halves.

  3. Boil the eggs in hot water for 4-5 minutes. Shell after cold.

  4. Heat up oil in a frying pan, add in onions, fry until onions turn soft and little brown in color.

  5. Add in beans and peas to the frying pan. Stir and seasons with salt and ground black pepper.

  6. Cook until the beans and peas are tender and the beans are no longer bright green.

  7. Place the beans and peas into a food processor. Process for 5 seconds. Add in eggs and walnut, continue process until the mixture turns to a thick paste.

  8. Add few drops of oil if the paste is dry. Taste and season.

  9. Serve with slices of crisp matzos or rye bread.
