Toast with Tomatoes and Mozzarella Cheese


  • 3 thin ciabatta/ French or Italian bread

  • 3 x 150g packets mozzarella cheese, drained and thinly sliced

  • 250ml/ 1 cup sun-dried tomatoes puree (paste)

  • 3 tsp mixed herbs

  • 2 clove Garlic, chopped

  • 30-45ml/ 2-3 tbsp olive oil

  • Ground black pepper


  1. Preheat the oven to 220ºC/ 425ºF/ Gas 7.

  2. Preheat the grill. Cut each ciabatta into ½ inch slices. Grill until lightly toasted on both sides.

  3. Apply one layer of tomatoes puree onto one side of the toast.

  4. Arrange the mozzarella over the tomatoes puree.

  5. Put the toast to a baking sheet. Spread over the mixed herbs, chopped garlic, ground pepper and olive oil.

  6. Bake until the mozzarella cheese is melted and bubbled.

  7. Take out the toast and let it to be settled for a few minutes before serving.
