1 large or 2 small
unpeeled cucumber, thinly sliced
2 or 3 medium size
onions, thinly sliced (based on personal taste)
150g sweet pineapple,
cut to bite size
2-3 tbsp fresh dill,
5-6 tbsp/ 75-90ml
white cider vinegar or wine vinegar
3 tbsp/ 45ml sugar
2-3 tbsp/ 30-45ml
Salt to taste
Place all the sliced
cucumber, onions and cut pineapple in a big salad
bowl. Season with salt and toss until well combined.
Place at a cold place for 10 minutes.
Add in vinegar, sugar,
water and chopped dill to the mixture. Well toss to
combine. Place in refrigerator to chill for few hours or
until ready to serve.
