Rinse the spinach leaves, then blanch in the boiling water. Remove, rinse
under running cool water immediately, drain well.
Mix together cooked spinach leaves with olive oil, malt vinegar, Basil, salt,
black pepper and sugar.
Place a round mould in the centre of the plate, add in season spinach, press
it lightly till set, then slowly removed the mould.
Top with the Feta cheese cubes, sprinkle 1 tbsp extra virgin olive oil over
the Feta cheese and serve with a pinch of crushed black pepper.
