Muhammara

Ingredients:

  • 1 1/2 slices toasted or day-old Granary / wholewheat bread

  • 3 medium size red (bell) peppers, roasted, skinned and chopped

  • 1 small onion

  • 2 mild chilies, roasted, skinned and chopped

  • 120g (1 cup) walnut pieces, toasted and ground

  • 3-4 garlic cloves, chopped

  • 15-30ml (1-2 tbsp) balsamic vinegar / pomegranate molasses

  • juice of 1/2 fresh lemon

  • 2.5 -5ml (1/2 - 1 tsp) ground cumin

  • 2.5ml (1/2 tsp) sugar, or to taste

  • 100ml (7 tbsp) extra-virgin olive oil

  • salt to taste

Preparation:

  1. Place the Granary bread (break into small pieces) in a food processor or blender. Add in all the remaining ingredients, except for the extra-virgin olive oil and blend until smooth.

  2. Drizzle the extra-virgin olive oil into the mixture gradually with the motor running. Process until the mixture forms a smooth paste.

  3. Adjust the seasoning.

  4. Transfer the muhammara into a serving bowl.

  5. Serve at room temperature.
