Melted Cheese Dip With Bread, Toast, Tortilla or Chorizo


  • 160g/ 6oz Gruyere (cheese)

  • 160ml/ 1/4 pint 2/3 cup white wine

  • 6ml/ 1 tsp Kirsch

  • 1 garlic clove, medium size

  • Salt and ground black pepper, to taste

  • Bread, toast, tortilla or chorizo


  1. Finely chop the garlic cloves.

  2. Put together the chopped garlic and wine into a pan. Bring to boil.

  3. Once boiled, reduce the heat and continue to simmer for 3-4 minutes.

  4. Roughly slice or grate the cheese and add into the pan. Stir together with wine until cheese melts.

  5. Mix the corn flour with Kirsch into a smooth paste.

  6. Pour the paste into the hot pan. Keep stirring when pouring.

  7. Bring to boil, stir constantly until the mixture is smooth and thickened.

  8. Add in salt and ground black pepper to taste.

  9. Serve at once in a heated serving plate.

  10. Garnish with some pepper and serve with bread, toast, tortilla or chorizo.
