• 2 ripe avocados

  • 2 red chillies with seed

  • 1 shallot

  • 1 medium size garlic clove

  • juice of 1 lemon

  • 30ml/ 2 tbsp olive oil, plus extra to serve

  • salt

  • flat leaf parsley leaves, for garnish


  1. Cut the avocados into halve and remove their stones (pits). By using a spoon, scoop out their flesh and put into a bowl.

  2. Mash the avocados flesh well with a potato masher or large fork.

  3. Chop the chillies, shallot and garlic finely. Stir them into the mashed avocado. Add in the olive oil and lemon juice. Seasoning with salt.

  4. Spoon out the mixture to a small serving bowl. Drizzle over some olive oil and scatter with a few flat leaf parsley leaves. Ready to serve.
