Bruschetta

Ingredients:

  • Few slice Paris wholemeal loaf/ Baguette

Tomato Salsa:

  • 80g tomatoes (diced)

  • 30g big onion (diced)

  • 29g spring onion (chopped)

  • 10g Cilantro (chopped)

  • 4 nos. black olives (sliced)

  • 1 tbsp olive oil

  • 1/2 tsp dried Basil

  • 1 tsp malt vinegar

  • pinch of salt

  • pinch of chicken stock granule

Garnishing:

  • Parmesan cheese

  • Few sliced cucumber

Method:

  1. Mix together the tomato salsa ingredient, chill in the fridge and ready to serve.

To Assemble:

  1. Place 2 sliced cucumbers on the Paris wholemeal loaf, and spoon some tomato salsa mixture on top.

  2. Sprinkle with Parmesan cheese, serve at once.
