Squeeze the juice of
half lemon into a big bowl. Add in water to mix.
Scoop out the core of each
halved pear. Put the pears into the bowl with lemon
water to prevent browning.
In a mixing bowl, mash the
cream cheese and blue cheese until combine. Add in
ground black pepper and light cream. Blend until smooth.
Add in chopped walnuts and slightly stir to distribute
them evenly. Add in salt to taste.
Prepare six serving plates
and arrange a bed of salad leaves on the plates.
Drain the pears and pat
dry with kitchen paper.
Place the pears on top of
the salad leaves with hollow side up. Arrange cheese and
cream mixture to top of pears. Add in cherry tomato and
extra chopped walnuts to each serving plate.
Garnish with dressing
